CRUSTLESS SPINACH QUICHE

Ingredients:

  • 1 small package frozen spinach, thawed

  • 1 small yellow onion, diced

  • 4 Tablespoons salted butter

  • 14 oz muenster cheese, grated

  • 6 eggs

Instructions:

  • Preheat oven to 350F.

  • Melt butter in pan and sautee onion until soft. Turn heat to low.

  • Squeeze excess liquid from thawed spinach and mix in with onions. Remove from heat.

  • Whisk eggs in large mixing bowl.

  • Add cheese and spinach mixture. Mix well.

  • Place in greased 8 or 9 inch glass pie plate.

  • Bake for 40-45 minutes.

  • Serve with bacon or sausage.
