CRUSTLESS SPINACH QUICHE
1 small package frozen spinach, thawed
1 small yellow onion, diced
4 Tablespoons salted butter
14 oz muenster cheese, grated
Preheat oven to 350F.
Melt butter in pan and sautee onion until soft. Turn heat to low.
Squeeze excess liquid from thawed spinach and mix in with onions. Remove from heat.
Whisk eggs in large mixing bowl.
Add cheese and spinach mixture. Mix well.
Place in greased 8 or 9 inch glass pie plate.
Bake for 40-45 minutes.
Serve with bacon or sausage.
