Butter Is Your Friend

I bought some beef stew meat at the grocery store this week because I wanted to try something new. I should have looked at the nutrition label before I brought it home because, although it is low in carbs, it is very lean. Meats that are lean/low in fat but high in protein can really throw off your macros.

So what should we do? Add butter, of course!

I decided to make a keto pepper steak in the Crock Pot for dinner today. I chopped up three green bell peppers and thoroughly washed some white button mushrooms. I layered some peppers, mushrooms and beef tips, seasoned with salt and pepper. Then I topped everything off with a stick of butter and a packet of au jus gravy mix. My side dish of choice will be riced or mashed cauliflower. Birds Eye and Green Giant have really stepped up their game with the frozen varieties they offer.

Ingredients:

2 lbs beef stew meat (seasoned with salt and pepper to taste)

3 green bell peppers, chopped

1 cup white mushrooms

1 stick salted butter, chopped

1 packet au jus seasoning mix

Cook on low in Crock Pot for 6-8 hours.
