Don’t Blame the Bacon for What the Bread Did

Do you see that picture? It is literally two pounds of beef wrapped in a blanket of woven bacon.

Before I embarked on a ketogenic diet, I probably would have laughed in your face if you told me a bacon-wrapped meatloaf could be considered “healthy.” But, surprise! Since a ketogenic diet fuels your body with fat, you can enjoy this meaty treat as often as you like. In fact, the entire meatloaf has fewer than 2 grams of carbohydrates!

I have tried several other meatloaf recipes over the last year - probably too many to count - but I never found one that tasted anything like a traditional meatloaf. And they always ended up being really bland and dry, no matter how I cooked them.

This bacon-wrapped meatloaf has emerged as a clear winner! It is easy (and kind of fun) to prepare, and its flavor is delicious. Serve it with a side of mashed cauliflower and you’ve got a homestyle dish of yummy comfort food.

Just one word of caution - make sure you cover your baking dish with aluminum foil. Since this was my first time trying this recipe, I didn’t realize just how much grease would be exploding all over my oven. I wanted to leave the dish uncovered so that the bacon would get crispy. However, when the smoke began clouding my kitchen, I decided covering the dish was a better option than receiving a visit from our local fire department. 😜

Bacon-Wrapped Keto Meatloaf


  • 2 lbs 80/20 ground beef

  • 2 eggs

  • 1/2 cup grated Parmesan cheese

  • 2 Tbsp minced onion

  • Salt and pepper to taste

  • 2 Tbsp garlic powder

  • 1/4 cup heavy whipping cream

  • 8 bacon slices


  • Preheat oven to 375F.

  • Thoroughly mix all ingredients (except the bacon). Form one loaf.

  • Place loaf in glass baking dish.

  • Lay 3 pieces of bacon lengthwise on top of the meatloaf. Cut remaining bacon pieces in half. Weave smaller bacon pieces horizontally across meatloaf.


  • Bake for 1 hr 10 minutes.
