Big Mac in a Bowl

Let's face it. Sometimes, you just have a "Mac Attack." Heck, I used to have them all the time and indulged myself whenever I wanted - along with french fries, a large Coke, and something sweet for dessert. But after working as hard as we do on a ketogenic diet, going through that drive-through just isn't worth the setback.

 

Enter the Big Mac in a Bowl! You seriously won't even miss the bun. 

 

I started off calling this one a Big Mac Casserole, but you serve it over a bed of lettuce. So, is it a casserole? Or is it a salad? Whatever you call it, the seasoned hamburger meat baked with cheese and PICKLES can help to satisfy your fast food cravings.

 

Big Mac in a Bowl

 

Ingredients:

  • 2 lbs ground beef

  • 2 Tbsp minced onion flakes

  • 1 Tbsp Worcestershire sauce

  • 2 Tbsp minced garlic

  • Salt and pepper, to taste

  • 2 cups shredded cheddar cheese, divided

  • 1 cup shredded mozzarella cheese

  • 3/4 cup Russian dressing

  • 20-25 dill pickle slices

  • 2 Tbsp sesame seeds

  • Chopped or shredded lettuce

 

Instructions:

  • Preheat oven to 350F.

  • In large skillet, brown the ground beef, minced onion flakes, garlic, Worcestershire sauce, salt, and pepper. Transfer to a large casserole dish or 13x9 baking dish.

  • To the warm ground beef, add 1 cup cheddar cheese, mozzarella cheese, and Russian dressing. Mix until combined (it's ok if cheese starts to melt). Spread evenly in dish. Top with pickle slices.

  • Sprinkle remaining cheddar cheese on top. Sprinkle sesame seeds on top of cheese.

  • Bake for 15-20 minutes, or until cheese is melted.

  • Serve on top of bed of lettuce. Add additional Russian dressing, if desired (just be careful - store-bought dressing has a higher carb count).
