Taco Skillet Tuesday

Who doesn’t love tacos?

When Bryan and I first started the keto lifestyle last year, we used the Ortega seasoning packets to make our taco meat all the time. Yikes!! We learned the hard way to always read labels! It was actually one of the meals that caused us to stall early on. One seasoning packet has over 32 grams of carbs.

But have no fear! There are plenty of seasoning combinations that are healthy and tasty. And instead of using tortillas or cheese shells, we have started adding shredded cabbage and cheese directly to the meat. It tastes great and is very filling. Plus, it takes less than 30 minutes from fridge to table.

  • 2 lbs ground beef

  • 1 cup salsa

  • 4 cups shredded cabbage

  • 4 tsp chili powder

  • 4 tsp cumin

  • Salt and pepper to taste

  • 1 1/2 cups shredded cheese

  • Brown ground beef. Drain fat.

  • Add salsa, seasonings, and cabbage to pan. Bring to simmer under medium heat. Cook until cabbage is soft.

  • Turn off heat. Mix in cheese until melted.

  • Add sour cream and guacamole, if desired.
