Pan-Seared Radishes

Potatoes used to be a huge part of my everyday diet. I grew up eating tons of mashed potatoes, and - as an adult - I loved to eat them by cubing them and sautéing in butter.

Surprisingly, I don’t crave potatoes that much on the keto diet, but sometimes you get hungry for a different kind of veggie.

Ladies and gentlemen, I present to you...the raddish. 

I never thought about cooking radishes, as I have only ever eaten them raw - usually in a salad. But let me tell you, cooked radishes are a game changer. You can throw them in your crock pot with some celery if you are making pot roast, or you can fry them in a pan. Our favorite recipe for radishes (so far) is seared in bacon grease, but we are excited to keep experimenting and finding new ways to enjoy them!

Ingredients:

1 small bag of radishes, thoroughly washed and cubed 

1 small yellow onion, chopped

2 Tbsp bacon grease

Instructions:

Warm bacon grease in skillet on medium heat.

Add onions and radishes. Sauté until soft.
