Have you ever made a “real” pecan pie from scratch? If so, you know how insanely unhealthy they are. While butter and corn syrup are certainly a delicious combination, the amount of carbs in just one piece of pecan pie can exceed the amount of carbs you should consume in an entire week.
These kinds of realizations have been pretty humbling for Bryan and me as we have navigated our weight loss journey. We used to be able to consume an entire pecan pie in one day if we wanted - and we didn’t think twice about the fat or calories.
But, as we have learned with so many other recipes, finding keto-friendly replacements isn’t terribly difficult. These keto pecan pie bites are quick and easy to prepare, and you don’t even miss the crust.
I used a parchment-lined tray to drop my spoonfuls, but I am going to try a greased mini-muffin pan the next time. Good luck trying to eat just one! ❤️
Over medium heat, brown butter until golden, stirring frequently.
Whisk in heavy whipping cream. Reduce heat to simmer.
Quickly whisk in syrup, Stevia, and vanilla.
Whisk continuously for next 5 minutes as mixture thickens.
Once mixture darkens slightly and has the consistency of caramel, remove from heat.
Mix in pecans and spoon clusters into parchment-lined tray.
Place in freezer 5-10 minutes.
