Sometimes I need to eat a lighter meal. Sometimes I just need a snack. Whatever the reason, if I’m looking for a quick bite, I don’t want to spend a lot of time cooking and I don’t want to make anything complicated.
While we are able to eat keto pizza whenever we want, we all know preparing the crust can be a little time consuming. Since pepperoni and cheese are a go-to snack straight out of the fridge...why not bake them together?
These Pepperoni Pizza Bites are warm and satisfying. They are fantastic when they’re warm, but just as tasty when they’re cold or reheated. So, even though we don’t get to use those mini muffin tins for cupcakes anymore, there’s no need to toss them to the curb!
72 pieces pepperoni
6 sticks string cheese
Preheat oven to 375F.
Use scissors to cut a slit halfway through pepperoni (I cut 6 at a time).
Interlock 3 pieces of pepperoni and place in muffin tin. Repeat until all spaces are full.
Cut each stick of string cheese into 4 pieces. Place one piece in each cavity.
Sprinkle Italian seasoning on each.
Bake for 10-15 minutes, or until pepperoni is crispy.
