Keto Corndog Bites

If your family is like ours, we love going to amusement parks when the weather gets warm. Aw, who am I kidding? We love going to amusement parks in any kind of weather! And part of the fun at amusement parks is all the tasty treats you can eat.

 

But as we all know, losing pounds is WAY harder than gaining them, so we have come to avoid many of our previous favorite amusement park foods, including corn dogs.

 

Thankfully, these Keto Corndog Bites taste just like the carb-filled originals, and are super easy to prepare. So grab your almond flour and your favorite brand of hot dogs, and get ready for a treat!

 

Ingredients:

  • 1 cup almond flour

  • 1/4 cup Swerve sweetener 

  • 1.5 tsp baking powder

  • 3 eggs, beaten

  • 1/3 cup heavy whipping cream

  • 1 tsp butter extract

  • 1/2 tsp vanilla extract

  • 3/4 cup shredded Cheddar cheese

  • 8 hot dogs, cut into thirds

 

Instructions:

  • Preheat oven to 375F.

  • Grease mini-muffin pan.

  • In large mixing bowl, combine almond flour, Swerve, and baking powder.

  • Add eggs, cream, butter extract, and vanilla. Mix completely.

  • Fold shredded cheese into batter.

  • Place heaping tablespoonful of batter into 24 prepared muffin cups.

  • Place a piece of hotdog in the center of the batter in each cup.

  • Bake for 17-20 minutes at 375F, until the tops are golden brown. Remove from the pan while hot. If they do not release easily from the pan, bake for a few more minutes.
