Bacon Cheeseburger Casserole

Nothing beats a big, juicy cheeseburger. And while we get to eat a lot of delicious bunless burgers on a Keto lifestyle, sometimes you just want a little...something extra. 

 

Of course, with our newly discovered love for Keto bagels, we could always use those to add a “bun” to our burgers. But when you don’t want to have to prep two separate meals at once, the trusty casserole is the way to go.

 

This Bacon Cheeseburger Casserole tastes just as good re-heated as it does straight out of the oven, which is always an added bonus for me. We chose to keep this one pretty simple with bacon and pickles as the only “extras,” but we plan to get a little more creative with the next one by replacing the pickles with some mushrooms and Swiss cheese.

 

Either way, this is a great comfort dish that is sure to please a crowd of one or many. 

 

Ingredients:

  • 1 lb ground beef

  • 1 small onion, chopped

  • 8 slices of bacon

  • 1 Tbsp minced garlic

  • Salt and pepper to taste

  • 1/3 cup chopped dill pickles

  • 3 eggs

  • 1/2 cup mayonnaise 

  • 1/2 cup heavy whipping cream

  • 8 oz shredded cheddar cheese

 

Instructions:

  • Preheat oven to 350F.

  • Cook bacon until crisp. Remove from grease and break into bite-sized pieces. Set aside.

  • In skillet, brown ground beef with onion, garlic, salt and pepper. Drain fat.

  • Mix bacon and pickles into ground beef. Spoon mixture into 2.5-quart casserole dish or 13x9 baking dish.

  • Sprinkle cheese over beef mixture.

  • In medium mixing bowl, combine eggs, mayo, and heavy whipping cream.

  • Pour egg mixture over entire casserole.

  • Bake at 350F for 30-35 minutes, until top is browned and set.

  • Let cool for 10 minutes before serving.
