Keto Sausage Gravy

I am the first person to admit I still struggle with emotional eating. Any time I feel stressed or worried or upset, my instinct is still to turn to food - even after a year and a half of keto. And breakfast is still one of the toughest meals for me when I’m struggling mentally...I just want to eat all the carbs I can get my hands on.

 

An old favorite “comfort food” that Bryan and I shared on many occasions was biscuits and sausage gravy. We have learned to make a gravy so rich and tasty, you don’t even miss the biscuits. Sure, we have plenty of keto biscuit recipes. But if you don’t have the “bread” prepped ahead of time, getting breakfast on the table can be a lot of work.

 

One of our new favorite meals is a savory sausage gravy served over scrambled eggs. Breakfast, lunch or dinner - you can’t go wrong with this delicious, EASY, and filling meal.

 

Ingredients:

  • 1 lb ground breakfast sausage 

  • 1/2 block cream cheese

  • 1 cup heavy whipping cream

  • Salt and pepper to taste

 

Instructions:

  • Cook sausage until crispy; do not drain excess fat

  • Add cream cheese and heavy cream

  • Bring to a boil and stir thoroughly; reduce heat and simmer until gravy is desired consistency
