Fall has officially arrived, and sheesh - we’ve already had our first snowfall of the season!
It never fails in our household - as soon as the weather gets cold, we want to snuggle up with a warm bowl of soup.
I haven’t had a great deal of luck with Keto soups in the past; they have always turned out pretty bland. But that track record has officially been broken!
Blonde Keto Chili is made quickly and simply on the stove top - not in the CrockPot. It is creamy and has a little bit of heat, and it is so delicious it will definitely be added as a staple in our weekly winter meal roatation.
1 lb ground beef
1 green pepper
1 small yellow onion
1 can Rotel
1.5 blocks cream cheese
3/4 box beef broth
Dice green pepper and onion.
Brown ground beef, pepper, and onion.
Add Rotel and cream cheese. Stir until cheese is completely melted.
