BBQ Pulled-Pork Sliders
Gone are the days of delicious, sugar-filled condiments like regular ketchup and barbecue sauce. And especially during these winter months, the cravings for comfort food - or greasy bar food - smothered in carb-filled sauces, can be pretty overwhelming. But if there’s one thing Bryan and I have learned as we have navigated throughout our ketogenic journey, it’s that you can almost always find a way to make any dish keto-friendly.
We recently returned from a family vacation to Disneyworld in Orlando, FL, where we definitely indulged in tons of carbohydrates (tsk, tsk on us!). Surprisingly, one of the things we ate a lot of was BBQ. And you know the drill...once you eat a certain type of food, you tend to have ongoing cravings for it for a while.
The meat portion of any dish is easy - especially with a slow cooker or instant pot. And we have been thrilled with the different sugar free BBQ sauces available on Amazon.com or at our local grocery store. The “bread” portions, however, have been a little more challenging.
Bryan has been pretty diligent about trying any keto dinner roll recipe he sees. And while we are always grateful to have any sort of “roll” with our meat and veggies, rolls are often pretty time-consuming to prepare. But we have found a new favorite recipe! It’s easy to prep and takes only a few minutes to bake...and the biscuits are delicious.
We used these cheddar garlic biscuits as the rolls for BBQ pork sliders, but we plan to use them to make breakfast sandwiches and deli sandwiches as well. YUM!
Pulled Pork - Ingredients
2 lb boneless pork roast
Salt, pepper, garlic powder, onion powder
Sugar-free BBQ sauce
Pulled Pork - Instructions
Season roast with salt, pepper, garlic and onion powders as desired
Place in slow cooker with 1/2 cup of water. Cook on low for 8 hours.
Shred pork and add 3/4 cup BBQ sauce.
Garlic Cheddar Biscuits - Ingredients
1 1/2 cups almond flour
1 Tbsp baking powder
Pinch of salt
1/2 tsp garlic powder
1/2 tsp onion powder
1/2 cup shredded cheddar cheese
1/2 cup sour cream
2 beaten eggs
4 Tbsp melted butter
Garlic Cheddar Biscuits - Instructions
Preheat oven to 450F.
In medium mixing bowl, combine all dry ingredients. Add cheese.
Add remaining ingredients. Mix thoroughly.
Prepare regular cupcake tin by spraying pockets with non-stick cooking spray.
Spoon batter into prepared baking dish.
Bake at 450F for 10-14 minutes.
