Keto Chicken Nuggets

I can't believe we haven't posted a recipe in almost a year... 😱😱😱

While Bryan and I follow a keto diet pretty regularly, I am ashamed to admit we didn't try ANY new recipes in the last 11 months! 😱😱 We have stuck to a pretty basic "meat and veggie" diet with no fancy extras. And we had WAY more cheat days than we should have. 🤦‍♀️

But we are BACK! And we were determined to find a tool to combat our 5-year-old's current food obsession...CHICKEN NUGGETS.

The "regular", carb-loaded nuggets really aren't that good when you eat them, so I often don't understand my strong desire to eat Nicholas's leftovers. BUT, Bryan made Keto Chicken Nuggets for dinner tonight and they were incredible! Highly seasoned and surprisingly crunchy, these nuggets were relatively easy to prep. And the recipe yield is large enough that you will get enough for several meals, which is always a bonus!

Filling Ingredients:

2 lbs ground chicken

2 cups shredded cheddar cheese

1 tsp garlic powder

1 tsp onion power

1/4 tsp pepper

1/4 tsp cayenne pepper

Breading Ingredients:

1/2 cup ground flaxseed

1/2 cup grated Parmesan cheese

1/2 tsp salt

2 tsp dried parsley 

Instructions:

Preheat oven to 425°F

Thoroughly mix all "breading" ingredients in small mixing bowl. Set aside.

Thoroughly mix all filling ingredients.

Scoop rounded Tablespoonfuls of the chicken mixture and roll in breading mixture. Form nugget shape and place on metal baking sheet.

Bake formed nuggets for 15 minutes at 425°F. Flip nuggets over, and bake for additional 10 minutes.
